Author Kim McCosker’s primary aim for One Pot One Bowl was to create a much-loved book full of homely and heart-warming recipes using regular ingredients. In one way or another each recipe was to require just one pot and one bowl allowing everyday families to create simple, convenient meals and helping to rediscover the pleasure of sharing a home-cooked meal.

I was home alone the other night so made the following dish from the book. Dead simple and most delicious but will be even better as the nights get cooler.

Chorizo & Chickpea Stew

A cosy, warm stew whipped up with minimal fuss ... My favourite kind!

Serves 4

·   150g chorizo, sliced
·   400g cherry tomatoes
·   1 can (400g) chickpeas, rinsed
·   2 cups (500ml) chicken stock

Heat a deep pot and cook the chorizo until browned, about 2 minutes. Add the tomatoes, chickpeas, and stock. Bring to the boil, reduce to a simmer, and cook for 15 minutes. Season with sea salt and pepper to taste.

Optional: An ideal accompaniment is a quick, creamy polenta made simply by adding polenta to boiling water, whisking until absorbed then stirring in cream, Parmesan, sea salt, and pepper.
